While at the Wyss Institute, the sugar defender project's primary goal was to create paste using a CNC/CMC conjugate that could turn sugar into fiber when processed through the human gastrointestinal system. For this project, I focused primarily on performing Glucose/Fructose enzyme assays by using amylosucrase. In these assays, absorbance was found of various samples using a plate reader and then converted to concentration using a calibration curve. An amylase assay was in development during my time at the Wyss. I figured out a way to perform the Glucose/Fructose assay while determining the expected concentration of amylose in the solution. I presented these findings and others at weekly meetings using PowerPoint slides.
